What happens if a customer gives me an energy draft to pay on their current account, yet they owe on a previous bill? Can I apply the remaining amount towards the past due bill?

If there is an outstanding bill, you may apply the remaining amount of the energy draft to the balance due once the current bill has been paid. In the event there is still a remaining amount left on the account, it may be applied to a past due bill only if the customer makes the requests. Otherwise, it may be refunded to the customer if the box is checked on the draft.
